Wish there were more EC Dylan covers (have only heard two).
Anything off of Blood on the Tracks would be incredible.. Especially "Idiot Wind."

I totally agree. I'd love to hear Elvis tackle anything off of that album, especially "Idiot Wind."

I would love to see more of this as well...."Tangled up in Blue", "Knocken on Heaven's Door" ...... "Buckets of Rain"....... "I Want You" (Blonde on Blonde) all would be great choices!!

Well, the two that he's recorded and released are "I Threw It All Away" on Kojak Variety and the George Jones demo of "You're Going To Make Me Lonesome When You Go" that turned up on the Kojak bonus disc.

Additionally, "Knockin' On Heaven's Door" was one of the Flip City Demos.

He's done a few Dylan covers live, as well. At the Imposters show I saw at the Ryman in Nashville in 2002 he sang the first few lines of "Tangled Up In Blue" as an introduction to "Brilliant Mistake". At that same show he sang the bridge of "Senor (Tales of Yankee Power)" in the middle of "I Want You" (the EC "I Want You" that is, not Dylan's). I know there have been some other live ones -- I know he's done "I Shall Be Released" (performed with Bob Dylan actually) and "You Ain't Goin' Nowhere". There could well have been some others, but those are all that come to mind at the moment.

He played You Ain't Goin' Nowhere and Knockin' On Heaven's Door with Roger McGuinn in Italy (plus So You Want To Be A Rock'n'Roll Star).

And I Shall Be Released with Robbie Robertson in front of half million people, also.

He also used to throw in snippets of Like A Rolling Stone and Subterranean Homesick Blues in Pump It Up (not in the same version) and Just Like Tom Thumb Blues in Brilliant Mistake.

While I don't believe that "Maggies Farm" can be improved on, it would be great to hear Elvis' interpretation.

Because I have yet to hear the Clarksdale Sessions material (I have the CD at home but it is a Fathers Day gift from my daughter, and she has no idea that I ordered it..) I would chose, from your list, Leave My Kitten Alone.

However, I think a sort of "Complicated Shadows" angst with a little bit of "Let Him Dangle" color could make it dark but melodically playful. That's more how I hear it.
